“Okay now that our spinach salad is done I’m going to put away our spinach. We are going to repeat these steps with broccoli. I’m going to drop it in the water. Wait to the broccoli is still firm but has that nice green color. Maybe about 2-3 minutes and we are going to spoon it out and take it over to the sink and give it a little stock bath. Since obviously you can’t squeeze all the fluid out of the broccoli you just want to try to get it as dry as possible. The reason for getting it dry is you want to absorb the flavor that you are putting on it and you don’t want the water to dilute that. So I’m going to put that in a bowl and that looks okay.
