Think soup, salad, and sandwich.

Soup – Many grocery stores and specialty stores carry turkey soup mixes. The meat and the bones make a delicious base for a soup. All you have to do with these mixes (complete with beans and spices) is add fresh vegetables and leftover bones. It really creates a hearty meal perfect on a cold weather day, and it is something out of the ordinary to do with your turkey leftovers.

Salad – Turkey is a great lean meat to throw on top of your salad for a kick of protein. Keep in mind that turkey might seem more bland cold because cold food needs to be seasoned more than hot food. Toss your cold turkey with some cheese, veggies (I prefer tomatoes, cucumbers, and red onions), and maybe even a hard-boiled egg to make a delicious chef’s salad. Put this on top of a bed of spinach or leafy greens and drizzle over balsamic vinegar and oil (or ranch dressing if you enjoy creamy dressings).

Sandwich – This is not your ordinary turkey sandwich. Combine all of your leftovers into a sandwich! You’ll be surprised how delicious it can be. Put stuffing, green beans, turkey and cranberry sauce atop a hearty whole grain bread and enjoy! It’s fantastic. If you’re not brave enough to try the stuffing with the green beans, put the leftover cranberry sauce atop your sandwich. Cranberry sauce tastes delicious with turkey and a little bit of honey mustard.
