How does a flower coffee filter turn blue, pink and purple? What is the experiment?

I am not sure what a “flower coffee filter” is. But one common plant that turns those colors according to the degree of acidity in the soil is a hydrangea. Lavendar in neutral soil, it turns bright blue with acid, pink with alkaline soil. If you added coffee grounds to the soil of this plant it would turn bluer since coffee is acidic. These colors in a hydrangea could be used to determine PH.
