Crystallization is akin to freezing, so basically when a liquid becomes a solid. Or when dissolved particles precipitate out of solution. The molecules in the liquid, which have no set structure, begin to arrange themselves in a set pattern which is largely governed by the shape of the molecules themselves and is usually the result of the liquid cooling.
