Last Q first – The NIV uses the word ‘grace’ 130 times so whoever told you it only uses the word once is not a reliable source of information! First Q last – The NWT reads, ‘For all have sinned and fall short of the glory of God, and it is as a free gift that they are being declared righteous by his undeserved kindness through the release by the ransom [paid] by Christ Jesus.’ The cumbersome rendition ‘undeserved kindness’ (instead of grace) does give a good explanation of what God’s grace is. In this era we have a poor grasp of the English word which does not do justice to the Greek or the Hebrew. In the Bible, grace can best be described as God coming down to move people to places of wellbeing. He ‘came down’ to move Noah and his family into the ark by foretelling and instructing them. That was physical wellbeing (salvation, actually). Most often, God takes the initiative to grant spiritual grace to people (salvation spiritually). He need not do it. He is not obliged to anyone.
