Answer Hello Tim << I've heard you're supposed to push the outside to the inside.>> That isn’t quite how it’s done. If your result is scrambled eggs I suspect that you are overdoing it. With looking over your shoulder it is hard to critique your technique so I will make some assumptions. After you pour the eggs into the pan let the eggs sit undisturbed until they begin to bubble slightly. This means that the mixture in contact with the pan has begun to set. By over mixing at this point you are breaking up the coagulated surface and the result begins to resemble scrambled eggs. Now, using a spatula, go ahead and stir gently. The coagulated surface will break but the uncooked egg will contact the heated pan and heal the torn portion. I realize that these instructions are a bit confusing but it’s like riding a bicycle or tying shoe laces, you can learn but it is virtually impossible to describe.
