How is corned beef made?
Corned beef is made from trimmed beef brisket that has been injected with pickling brine, also known as a corning solution. It is the brine that lends corned beef its unique flavor. You can purchase beef already corned or make your own by roasting the brisket in a solution of pickling brine (the same used to make pickles) and water.
Fresh beef brisket is trimmed, and then injected with a special “corning” solution (also called pickling brine) before it is cooked. The way the brisket is trimmed, and the contents and amount of the solution, is what gives corned beef its special flavor.
