How is Farmhouse Cheese best stored?
Corleggy and Drumlin are both hard natural cheeses, which do not like refrigeration very much. They are very happy at room temperature, not exceeding 18°celcius, such as a scullery or a cool room. If you don t have such facilities, the bottom section of your refrigerator will provide an ambient temperature. As with a bottle of wine, your cheeses should always be taken out of the fridge one hour before you plan to eat them.
