How Long can Cheese be Left Unrefrigerated?
The harder the cheese, the longer it can be left unrefrigerated. Soft cheese like cream cheese should not be left out at all, but a cheese like cheddar can be out for a week or more. It hard cheese gets moldy you can cut off the moldy part and the rest will be fine to eat. It might not feel like the right thing to do, but it is safe and will taste fine.
