Wrapping chicken in aluminum foil is a modern version of the classic “en papillote” (in paper). Here is a recipe for chicken breast in paper, and those are the times they give. It’s helpful to have a thermometer test for doneness. The Thermapen is good, but you can pick up cheaper ones. Cook chicken until the thermometer reads 160 or 165. If it’s not done, re-wrap it and cook it some more.
