The trick with meat if you want it succulent is to cook it as slow as possible Gas Mark 2-3 – 150-160oC Cook the beef in tin foil in a baking tray on the lower part of the oven for about 2 hours and turn it half way this will allow the juices to stay in the beef you should then have a nicely cooked bit of beef after cooking let it rest out of the foil for about 20 mins before serving this way it will be even more tasty and tender
