agree with the previous poster, don’t wash eggs also, agree that store bought eggs are already quite old, so freshly laid ones will last longer disagree that yolk colour is any indication of freshness, yolk colour is determined by the chicken’s diet as someone mentioned above, the float test is the best way of seeing how fresh an egg is without cracking it … http://busycooks.about.com/od/quicktips/qt/testingeggs.
