I checked all of my Jam/Jelly books and found a few things that might help you. Only one book made jam using only currants, especially Black currants because they have a muted flavor and less juice. Most of the recipes mixed them with raspberries and/or several other berries. I did find an English cookbook that had 5 different recipes for Black currant jam. One said for every quart of fruit allow two pounds of sugar another said for every 2 pounds of fruit use 1-1/2 pounds of sugar. Unfortunately, this book doesn’t tell you how many jars it will fill. Cost will depend on the cost of sugar in your area as well as jars if you don’t already have them on hand. Based on the above recipes, you’ll need about 21 pounds of sugar. My advice would be to go to the store and price 20+ pounds of sugar. As a rough estimate about 2 cups of pulp will yield about 1 pint. So you could come out with 14 pints of jam or 7 half-pints.
