Chex Mix 9 cups Chex cereal (corn, rice, wheat – can mix) 6 T butter 3 T light corn syrup 1/2 tsp. baking soda 1/2 c white chocolate chips Put cereal in a large microwavable bowl. Line a cookie sheet with waxed paper. In a microwavable 2 cup measuring cup microwave sugar, butter and corn syrup uncovered on high 1 minute. Stir and microwave another minute or until melted and smooth. Stir in soda until dissolved. Pour over cereal and stir to coat. Microwave on high 3 minute stirring every inute. Spread onto cookie sheet and cool 10 minutes. Break into bite size pieces. In a small microwavable bowl microwave chips on high 1 1/2 minutes or until chips can be stirred smooth. Drizzle over snack. Refrigerate until set. Advice on this. Use a good chocolate chip, it melts better than the store brands. You can eliminate 1 cup of cereal and add a 1 cup mixture of nuts, pretzels, and if you like M&Ms. Or you can eliminate mixing them and just add 1 cup of either one. Hope this helps.
