You do not need to make it with mozzarella and the sausage you have should be fine too. Here’s what I would do given your ingredients on hand. Cook the lasagne noodles according to the package or just let them soak in hot water for about 20-30 minutes to soften. Saute the sausages in a little olive oil and garlic, and onion if you have any on hand. Add the sauces to the meat mixture. Set aside to cool. Mix up the cottage cheese and the parmesan cheese with a couple of eggs, season with salt and pepper. If you have some fresh parsley and basil throw that in as well (and you can add that to the meat sauce too). Save some of the powdered parmesan for the top of the lasagne. To assemble, layer a spoonful of the meat mixture on the bottom of the pan. Add a layer of noodles. From the remaining meat sauce mixture, layer 1/3 of the meat sauce, then add 1/3 of the cheese mixture. Add another layer of noodles, layer another 1/3 of the meat sauce and 1/3 of the noodles.
