Add more egg and bread crumbs. I use everything from crushed pretzels to crushed Doritos and egg to my meatballs. Also make sure anything like onions and peppers are cut up really really small so they don't make the meatball fall apart. Good luck!!  more

be sure to put egg in your recipe and use cornstarch. It will not fall apart anymore. For my sauce, I mix 1/8 cup vinegar with 1 cup water, add sugar, 2 tbsps.tomato catsup, white ground pepper and 1 tbsp. of cornstarch. Mix very well till the conrstarch is dissolved, see if the sweet sour taste is alright with you. Cook in a medium fire stirring constantly till it thickens. I prepare it sometimes with slices of pineapple, thin slices of carrots and red and green peppers, it you want it special. Add tabasco sauce, if you like it hot.  more

This is my ingredient list for meatloaf and meat balls. I of course just chop everything extra small for meat balls, this is not exact as I do it a little different each time. Also the key to meat loaf/balls is in the feel of it. You want a kind of firm texture. It should hold it's shape but not fall apart when you roll the balls. I also used to fry my meat balls but had basically the same problem as you. Now I bake them and have no problem what so ever. Sausage- sometimes Lean hamburger Green bell peppers (reds also if I have them) Onions Mushrooms Green Onions Eggs Ketchup Mustard B-B-Q sauce-sometimes teriyaki-more for meat balls Worcestershire sauce Dry ingredients of some kinds such as oatmeal, dried out bread, slightly crushed Plain cheerios, other cerals or crackers, etc...  more

Yes Make it Firm when you Form the Balls, Make it so Solid it can't fall apart you see some falling Apart Re-Firm it But Do it before Cooking, One you Cook the Meatballs its too late.  more

They fall apart as you are browning them? If so, they may need to cook longer. Use a medium to high heat and give them a little more time. Be gentle when handling them. Make sure your skillet is well oiled so they dont stick.  more
