Jumbo eggs – and I assume you mean from a chicken – are perfectly safe to eat.  Of course you should treat these like any other eggs and cook them thoroughly.  If eggs are uncooked or partially raw, there is a risk of salmonella contamination (just like with raw chicken meat).  Eggs are a good source of protein, and the yolks are a great source of vitamin E.  The yolk can also be used to treat blemishes on the skin, due to the high levels of vitamin E.  When an egg is cooked, the protein is used by the body much more easily (this is called "bio-availability"). Eggs are also high in B vitamins, vitamin A, vitamin D, potassium and iron.  

The difference between a Large egg and a Jumbo egg is about 0.5 ounces, or about 15mL when cooking.  If you are concerned about the cholesterol in eggs, it is better to stick with the large or medium eggs, as they have smaller yolks.  Some studies are arguing that the cholesterol in eggs is not absorbed into the body fully, while others say that it has to be consumed in moderation.  Basically, nobody is quite sure about that just yet, so it is better to be safe than sorry.  Jumbo eggs may provide just a little bit more in terms of vitamins and protein as well.  So enjoy them!  Just remember if you plan on cooking certain recipes with them, they are a different measurement than the average egg, so keep that in mind.

You must be referring to the recent egg recall announced by the US Food and Drug Administration.  There was a problem with eggs in their shells produced by Wrigh County Egg of Galt, Iowalast week that consumers were alerted to with an urgent nationwide egg recall due to a risk of salmonella poisoning.

An alert went out on August 20, 2010 again that the USFDA announced as a related nationwide recall for eggs from HIllandale Farms, also in Iowa (although the recall was announced in the state of Minnesota). The egg recall has been issued in nine states for 13 brands of shell eggs from Wright County Egg based in Iowa was expanded yesterday to 380 million eggs from the original 288 million eggs that were recalled. The egg recall lists 13 brands suspected of salmonella contamination are Lucerne, Albertson, Mountain Dairy, Ralph’s, Boomsma’s, Sunshine, Hillandale, Trafficanda, Farm Fresh, Shoreland, Lund, Dutch Farms and Kemps. The Hillandale Farms brands are Sunny Farms, Sunny Meadow, Wholesome Farms and West Creek. The number of eggs being recalled may double from the 380 million announced yesterday.

To know for sure if you have tainted eggs, you should go onto the US Food and Drug Administration’s Website and check the numbers listed as being dangerous to the public; you will find the numbers they are looking for on your egg carton;  if they match the recalled items, you should return them to the market from which you purchased them for a full refund or exchange of non-tainted items.  You can also throw the items away if you prefer.

Just so you know, salmonella poisoning can cause serious and sometimes fatal infections in young children, the elderly, and people with weakened immune systems, so it’s important to see a doctor right away if any of the tainted eggs have been ingested and any of the symptoms of salmonella are presenting themselves.
