Blood work for allergies will not tell u if u are gluten intolerant, only if u are allergic. A more likely suggestion would be Celiac DIsease, an autoimmune disease affecting 1 in 133 ppl. In that disease the body cannot digest gluten (wheat, rye and barley and commercial oats) so therefore a gluten free diet is necessary. BLood testing is available for Celiac but is not always accurate. Endoscopy with biopsy is a more accurate testing but there is also at home genetic testing available. Because 97% of celiacs carry the genes for celiac, if u have the genes u can be assured you’ll have celiac triggered at some point or another in your life.
