If the defending units in a fortified space consist only of Ottoman cavalry, does the attacker roll one die for every attacking unit, or are his rolls halved?

The attacker’s rolls are halved; the cavalry is a “defending unit” for the purposes of Step 3 of the Assault Procedure. However you should note that Step 4 of the Assault Procedure specifically mentions that these cavalry units do not provide additional dice for the defender.
