Is capelin roe (masago) sold raw and unprocessed?

I am a former chef and worked in Japan, and use it and Tabico (Flying Fish) and both are salted, tabico and masago do sometimes have colours add or wasabi to change there outer colour, both are yellowish and clear with out this treatment, capelin are small fish like an anchovy, most come from Canada, flying fish is a coastal fish from the west of of Mexico, and when I worked in Jamaica it was a favourite there also. Like all roes/caviar’s, they have to be salted or they would spoil with in a few hours, sturgeon, salmon and other have been salted, the only roes I have seen sold fresh are cod, shad and some other flat fish.
