Aluminum is a very reactive metal and some studies have suggested that it might have a link with Alzheimer’s. But cooking with aluminum pots is probably safe. Despite the fact that pure aluminum is very reactive, it quickly forms an oxide coating whenever it comes in contact with air. This coating is actually very UNreactive, so very little is likely to end up in your food. “Anodized” aluminum cookware has an extra-thick oxide coating so it’s even safer. The only thing that is not recommended for aluminum pots is cooking with acidic food. Acid will dissolve the oxide coating and some of the metal. Even so, it will only be a tiny amount.
