Is red velvet cake better with cream cheese frosting or boiled icing?

I just made my first one and it was great. My tips, Look for the large bottle of red food colouring instead of the pack that has 4 colours in it. That one little bottle of red that comes in the mutli pack isn’t enough so you’ll have to buy two packs and then have green blue and yellow lying around that you may never use. And dont use gel or powdered coloring unless your recipe specifically calls for it. Most recipes I’ve seen call for the cocoa powder and colouring to be mixed into a paste before being added to the cake batter and the liquid colouring does this the best. Two tablespoons of cocoa powder just didn’t seem like enough to give the cake flavor to me so I added a tablespoon of chocolate extract. An additional tablespoon of cocoa powder would turn the cake a brownish red, so the extract was a better choice. Cream cheese frosting has a nice tang to it from the cream cheese that contrasts well with all the sweetness. It also holds up a little better if the cake has to sit out in
