Answer Hey Penny, all rice cooks beautifully by microwave even if you don’t have a rice cooker. Since the pot never gets hotter than the ingredients you never have to worry about scorching or sticking. For brown rice; mix 1-cup rice with 3-cups of chicken or vegetable stock or water in a 2-3-quart microwave safe dish, or your rice cooker. Cover the dish with plastic wrap or the dish cover and cook on high for 10-minutes and medium (50% power) for 25 minutes or until the rice is tender. For all other rice just add double the amount of water (1-cup rice to 2-cups of water) and cook on 70 power for about 20-minutes or until the rice is tender. Incidentally, other grains and pulses also cook well by microwave. Lentils, split peas, barley, couscous, bulgar wheat, and other stuff in this category cook well. I’ve never eaten quinoa but I’m cooking it tonight because it sounds interesting and is the only grain that is a complete protein.
