1 package of frozen or refrigerated tortellini (we prefer Buitoni brand) 1 jar of vodka sauce 1 can of chick peas 1 10 oz package of frozen spinach Cook the tortelloni according to the package directions, combine sauce, chick peas and spinach in a saucepan and add the drained, cooked pasta, stir to coat everything and serve! The chickpeas add protein and contain a large amount of tryptophan (the same stuff in turkey that makes us feel good after Tgiving dinner). The cheese in the tortellini and the cream in the sauce isn’t exactly fat free, though, but the spinach is full of all kinds of yummy stuff. We usually serve this with a side salad and in less than 30 minutes we have a nutritious, tasty, healthy meal. I will add this disclaimer – we are a family of two, so you may have to double that recipe to make enough for a larger family. It makes about 3 generous servings.
