Nuevo Latino Cuisine is the natural melding of traditional Latin dishes with other cooking styles. It is what I often refer to as making an ethnic food accessible to a mass audience. For instance it’s not unusual to see Latino dishes borrow from Mexican cuisine. I’m especially fond of taking toston cups and instead of filling them with pernil (roast pork) or yellow rice I’ll add a layer of refried beans and cheese and shredded lettuce and fresh salsa on top. When I appeared on Fox 5’s Morning show it was a celebration of family culture and America. I took another page from Mexico with my take on huevos rancheros. I served a scrambled egg topped with salsa. I also crossed over to what would be considered strictly Middle-American serving caramelized apples and ice cream in a toston cup.
