Ingredients 3 cups water 2 cups sugar 4 tablespoons gelatine 1½ cups icing suagr, sifted ⅔ cup cornflour ¼ teaspoon cream of tartar ½ teaspoon rose water Few drops pink food colouring ¾ cup icing sugar, sifted Method 1. Combine water, sugar and gelatine in a large microwave safe dish. 2. Microwave on high for 7 minutes. Stir well cook for a further 7 minutes. 3. Combine icing sugar, cornflour and cream of tartar. 4. Stir into sugar syrup. 5. Microwave on high power for another 6 minutes. 6. Blend in the rose water and colouring. 7. Pour into lightly oiled 18×28 cm lamington tin. 8. Refrigerate until firm. 9. Cut into small logs using a wet knife. 10. Toss in icing sugar. 11. Store in an airtight container in the refrigerator.
