Once a given device has a pwnage + jailbreak flow for it, it's pretty straightforward to port it to each new Apple update. It used to not be that way...back in the 1.x days. Back then, it was necessary to find a brand new jailbreak method with every new update. But since pwnage works at such a low level, once it's working for a given device, that device is pretty much always pwnable and jailbreakable -- and Apple updates are easy to accomodate. And that's where we want to be with iPod Touch 2G.
