There are a huge number of festivals here in Italy. They tend to be local or regional. It's difficult to narrow down to three; everyone will have there own favorites, but some big ones include: Il Redentore in Venice (July). It's a celebration keeping a promise made in surviving the plague. The highlight is a big fireworks display in the lagoon in front of the Doge's palace. The Umbria Jazz Festival in Perugia is a world class music event. (The Eurochocolate Festival in Perugia is great too.) The truffle festival in Alba includes costumed events, truffles, world famous chefs, ... There are literally thousands of food festivals around Italy over the course of the year. San Giovanni in various places around Italy is pretty important.
