You can interchange rolled oats and quick oats with little change to texture in the recipe. You cannot substitute “instant” oats for ANYTHING and you can’t substitute steel-cut oats for rolled or quick oats because they will not get soft without a long cooking in liquid. Substitue away… if it’s for baby, you might want to just give it a taste-test before you serve it to ensure the texture is fine and soft enough for baby to handle without choking. Bon Appetit… or whatever you say to a baby when you give them oatmeal.
