You will save money by buying just a few pitchers and having your wait staff walk around to do refills. However, it is convenient for your patrons if you leave a nice-looking carafe at their table so that they can serve themselves - obviously, this is more expensive and works best if you have tables large enough to support two dinner plates, bread plates plus the carafe.
