The variable speed dial allows the user to control the speed of the blades and blending needed for each recipe or ingredient. For a very smooth mixture, the highest speed should be used. For coarsely chopped ingredients, a lower speed should be used for a shorter period of time. The higher speed also insures that the motor stays cooler due to the speed of the cooling fan.
