Make sure your flour is unbleached, use raw sugar (not regular granulated white sugar), and unprocessed baking cocoa. If a recipe calls for baking soda and an acid like lemon juice or vinegar, mix the two together before adding them to the batter–this helps eliminate the chemical taste of the baking soda and prevents it from making salty little clumps in the cake.
