Eucalyptus will shoot again very quickly, so you would be better to kill the stump. Use SBK (stump bush killer), drill a hole about 4 to 6 inch into the centre of the stump, make a few cuts across the centre of the stump and cut off all the bark round the outside. Mix some oil with the BSK (old engine oil will do), cover the stump in the mixture and cover with a sheet of plastic. SBK can be dangerous if not used correctly, always follow the manufacturers instructions to the letter. SBK is the best stump and brush killer on the market and can be bought from any good garden centre or B&Q.
