What are Semisoft Ripened Cheese?
Examples of semisoft ripened cheese are bel paese, brick, and Muenster. These cheeses are ripened from the interior as well as on the surface by characteristic bacteria or mold cultures or both. The ripening begins soon after the cheese is formed and continues as long as the temperature is favourable. Blue, Gorgonzola, and Roquefort are cured by blue mold and are mellow with piquant flavour.
