I make a Meringue Martini. It uses four ingredients; Egg Whites, Raspberries, Double Cream and Caster Sugar. Recipe; Eggs whites whipped into soft peaks, add 50g of caster sugar and whip again until egg whites have a silky look to them. Add another 50g of caster sugar and whip until mixture looks deliciously silky. Pour meringue mixture onto some greaseproof paper and place in an low oven 120C for two hours Throw raspberries in a bowl and sprinkle over some more sugar, mix and place in fridge. When meringues have finished in oven, remove and leave to cool. Lightly whip double cream and set aside for dish assembly. Take fruit out of fridge. To serve, break meringue into small pieces and throw in a bowl, add raspberries and double cream, mix together and serve in a Martini glass http://gocookyourself.com/post/6…
