My Mother always makes a non-yeast Zucchini Bread that is amazing. I definitely recommend it with a 10 out of 10. Here is the recipe: ZUCCHINI BREAD MAKES 2 LOAVES “This is one of the recipes we found when there was an abundance of zucchini coming out of the garden. Turned out to be a favorite. My mother baked several batches in mini-loaf pans, froze the breads and gave them as presents the following Christmas.” INGREDIENTS * 3 cups shredded zucchini (about 3 medium zucchini) * 1-2/3 cups granulated sugar * 2/3 cup vegetable oil * 2 teaspoons vanilla * 4 eggs * 3 cups all purpose flour * 2 teaspoons baking soda * 1 teaspoon salt * 1 teaspoon ground cinnamon * 1/2 teaspoon ground cloves nutmeg * 1/2 teaspoon baking powder * 1/2 coarsely ground or finely chopped walnuts Preheat oven to 350° F. Grease bottoms only of 2 loaf pans, either 8-1/2 x 4-1/2 x 2-1/2 or 9 x 5 x 3-inches. Mix zucchini, sugar, oil, vanilla and eggs in large bowl. Stir in remaining ingredients. Pour into prepared pan

There are lots and lots of bread recipes that don’t require yeast. They’re generally called “quick breads“, using baking powder for the lift. They make everything from beer bread to zucchini bread. The link goes to literally hundreds of them, and you can take what you like. These are very easy recipes, just measure, stir, pour, and bake. If you have a favorite muffin recipe, you can pour the whole batch of batter into a loaf pan; 12 muffins = 1 loaf of bread. Just bake it for about 50-60 minutes at 350, and be sure to let it cool in the pan for at least 10 minutes before trying to remove it. Three very different quick breads, all really good. Whole Wheat Porter Loaf 1 1/2 cups (10 ounces) unbleached all-purpose flour 1 1/2 cups (13 1/2 ounces) whole wheat flour 4 1/2 teaspoons baking powder 1 1/2 teaspoons salt 1/3 cup packed brown sugar 12 ounce bottle Porter beer (or other good dark beer) Preheat oven to 350 degrees. Lightly spray a 9×5-inch loaf pan. In a large mixing bowl, combine all-purpose flour, whole wheat flour, baking powder, salt and brown sugar. Pour in beer, stirring just until a stiff batter is formed. It may be necessary to mix batter with your hands. Scrape dough into prepared loaf pan. Bake in preheated oven for 50 to 60 minutes, until a toothpick inserted into center of loaf comes out clean. Cool before slicing. Here are a few of my favorites: Basic Beer Bread 3 c. self rising flour 2 T. sugar 1 can beer Mix ingredients and spoon into a greased loaf pan. Bake for 25 min. at 350. Brush with butter and bake for 25 min. more. You can add flavorings to this basic recipe, such as chopped onions/dill, garlic/parmesan or cheddar cheese. I have used this basic recipe for years and nothing I have added tasted bad. Another favorite and one I serve often to B&B guests is this one. Last year I mixed all the dry ingredients in cellophane Christmas bags and gave this bread as gifts to neighbors and coworkers with the instructions on how to add the beer and cook. Everyone I gave it to asked me for the recipe. Raisin Beer Bread 3 c. self rising flour ¼ c. brown sugar 1 tsp cinnamon 1 can beer ½ c. raisins ½ c. chopped walnuts Combine all the ingredients and put in a greased loaf pan.
