Galettes They're savoury crepes filled with all sorts of meats, fish, veggies, cheese, etcetera. The one I liked best was a Galette au saumon fume (smoked salmon crepe) with cream. Coq Au Vin Rooster cooked in wine, with ham and vegetables and sometimes brandy. The sauce is very rich and tasty. Cassoulet A rich stew of beans, sausage and other meat. Ratatouille A French veggie stew, very rich, tomatoey and delicious. A nice change from all the pork and cheese you get in France. My friends and I had a lovely tarte a l'oignon (onion tart with bacon and cream), and very good crepes with hazelnuts, almonds, and creme fraiche from the roadside creperies. Classic tarte tatin (apple) is sweet and yummy. Try some bread and wine while you're there (if you're old enough), and try the escargots as you promised.
