Stainless, cast iron, enamelized iron, etc all will stick to some extent or another and require considerably more care to give even a close proximity to non-stickiness as Teflon. Anodized, by the way, is the treatment applied to the outside of aluminum pans. It is somewhat non-stick, but isn’t durable enough to use on the inside of a pan. It does make the outside of the pan much less susceptible to staining (it WILL stain a bit) and easier to clean. Here’s the most important thing, in my opinion: Buy quality pots and pans. If you buy the best quality you can afford, you will have fewer problems with the Teflon coating. The other important thing to understand is that temperature is very important.
