I would suggest using knit gloves for most cameras and batting gloves for cameras that have smaller controls and buttons. Obviously you want to keep a larger set of regular ski gloves handy if things get too cold, but both knit gloves and batting gloves will provide the necessary flexibility to operate the controls on the majority of of cameras. Changing media cards and batteries should probably be done barehanded.
