This was selected as Best Answer The first thing is to check to see how much competition you will have. A Chinese takeaway just opened near my home, there is only one other in the town and only one Chinese restaurant. Next must be you potential customers. A restaurant about 10 miles from here is a Thai restaurant and the food is so good the King of Thailand asked for food to flown from there to Thailand. Reputation right from the start obviously helps too. With any kind of restaurant I think you need one person in control of cleanliness and hygiene and that must be as good as you can possibly get it both in areas of food preparation and in the customer area. Ambience is vital but be careful of candles on tables and that sort of thing. Fire regulations must be strictly adhered to. There are lamps now that run on rechargeable batteries that you place on the tables to provide a intimate atmosphere without the fire risk of candles or trailing wires.
