Mendel was able to demonstrate independent assortment with his experiments using peas with 2 traits… tall/short and wrinkle/smooth. You just need to explain how you get all combinations of possible genotypes and how that relates to the phenotypes that you see. You can do this by using the Punnett Square in the text that is used when teaching these experiments to students. Be sure to state which trait is dominant and which is recessive. You will want to include the ratios of the genotypes and phenotypes.
