Fruit is easily available this time of year so why not whip up a fruit salad? Depending on what’s in season you can use fresh fruit instead of canned. If you use all fresh fruit, you will need either pineapple or peach juice for this recipe. Feel free to mix and match fruit to create your own special treat. Creamy Fruit Salad * 1 14 1/2 oz. can sliced peaches * 1 20 oz. can pineapple chunks * 1 banana, sliced * 1 c. fresh strawberries, sliced * 1 small box vanilla pudding mix Drain peaches and pineapple reserving the juice in a measuring cup. Mix peaches, pineapple, banana, and strawberries in a large bowl. Add pudding mix to fruit and stir. Add reserved fruit juice gradually to the fruit and stir until you get a creamy consistency.
