There aren't any requirements though having some back ground working in a restaurant particularly kitchen (if you can) is obviously not a bad move. Simply having some idea of how a kitchen runs and some basic things (like using knives properly), knowing what equipment is, what it does and how it works. I looked up the tuition at Johnson and Whales (GA), which is one of the top schools in the country, the tuition was just under 22,000. There are smaller schools that are more local (especially in metropolitan areas) that are of good quality that are probably cheaper. I tried to find the tuition for one that I know about that's local to me, but the tuition wasn't listed (it should however be cheaper). I don't have a true career in pastry arts (considering it in the future however- and have extensive culinary and restaurant background), I've know a few chefs personally and you definitely on the right track considering a vocational school.
