First, let me applaud you for wanting to use your Christmas money for donations to the animal shelter. I think that is a very thoughtful and selfless gift! Shelters always welcome cash donations, but most have "wish lists" of necessary items also. These usually include paper towels, bleach/sanitizers, collars of various sizes, food and water bowls and such. Most shelters are always happy to accept donations of any type of dog and cat food as well, but some have specific requirements for cat litter and/or blankets and toys. The shelter in our county used to take donations of shredded paper to help with litter costs, but stopped doing this several years ago. When in doubt, just call and ask them. Your best bet is to contact your local shelter and ask them specifically what they need, use some of the money to purchase items on their "wish list", and donate the rest as cash.
