Bananas typically ripen in hot, moist environments such as South America or Africa. They will tend to brown anyway because of its ripening process but if placed in a cool, dry environment (such as the refrigerator) they will ripen (brown) much quicker. They always turn brown when they are bruised, similar to other fruits, not sure why that is though.  more
