What determines the different flavours found in a good Olive Oil?
27 Many different factors play a role in the flavour and composition of a good olive oil. Flavours distinctly vary by variety and the degree of ripeness when harvested. Olives unlike wine can be harvested over a period of several months during which they slowly ripen from green to multi-coloured to purple and finally to black. Every stage of ripening yields a different quantity and flavour of oil. Weather patterns and variable production factors also have an effect. Different blending skills also determine the final composition before bottling.
