Knights were generally pretty wealthy as they had to be able to afford their horses, armour, etc. They’d eat in the Great Hall of the castle; wealthier people would eat mostly meat (game, poultry, beef, mutton, pork, etc, as well as all kinds of fish especially on religious days). They would eat vegetables also, but poor people ate those more than meat. The Crusades opened up a world of spices to Europe, so many dishes would be well-spiced; honey would be used as a sweetener. They’d drink ale and wine, and fortified wines such as mead. Trenchers were used as plates – stale bread cut into squares – and when the people had used them they would be given to the poor.
