They would have worn the ordinary clothing of the day, without aprons. There was no idea of hygiene at the time, so the bakers’ everyday dress of homespun tunic, probably linen or cotton shirt/vest and shoes of leather would have been worn.

Bakers in medieval Europe would have worn wool tunics over linen under-tunics. Cotton was not available in Europe at that time. Wool was protective since it doesn’t burn.  If a spark from the ovens landed on the baker’s outer clothing, it would self-extinguish and just leave a small hole that was easily mended.
