If you use a fine grater, you can literally grate your own cinnamon for any dish calling for it. Apple pie, cinnamon toast, oatmeal, hot chocolate, top of some whipped cream on pudding, crush and put into hot coffee, etc. The sky is the limit. Word to the wise: It would be more beneficial to put a small pot of water on low and simmer a stick or two of the cinnamon rather than actually burn it. P.S. I know you can physically eat raw ginger but it is not recommended as it is very fibrous and difficult to digest without having been cooked. It is spicy as well. Make some tea or even some stir fry with it next time.
