I love quiche and there are so many recipes for making it. Eggs and half and half is the base to most and you add the meats and vegetable and meats that you desire. Here is a delicious recipe you can start with.

 

Bacon and Swiss Cheese Quiche

Ingredients needed to make a Bacon and Swiss Cheese Quiche crust:

 

  • 1 cup flour
  • ½ teaspoon onion salt
  • 2 tablespoons butter
  • 2 tablespoon shortening
  • 2 to 3 tablespoons cold water

Directions for making the Bacon and Swiss Cheese Quiche

Step 1: Mix together in medium size bowl the flour, onion salt, butter, shortening and cold water; combine mixture well.

Step 2: Roll dough out thin and shape into 10-inch pie plate.

Ingredients needed to make Bacon and Swiss Cheese Quiche Filling:

  • 2 cups, 8 ounces Swiss cheese, shredded
  • 2 cup half and half milk
  • 4 eggs, slightly beaten
  • 1 tablespoon cornstarch
  • 6 slices bacon, cut into 2" pieces
  • 2 tablespoons Parmesan cheese
  • 1 teaspoon chopped chives
  • ½ teaspoon salt
  • 2 tablespoon butter, melted

Directions for making Bacon and Swiss Cheese Quiche:

Step 1: Preheat oven to 375 degree F.

Step 2: Cook bacon until crisp. Drain; place in pie shell.

Step 3: Place shredded cheese on top of bacon.

Step 4: In medium size bowl mix together until blended; half and half, eggs, cornstarch, chives and salt.

Step 5: Pour milk and egg mixture over meat in cheese in pie shell.

Step 6: Sprinkle on butter and Parmesan cheese.

Step 7: Bake at 375 degree F for 40 minutes.

Step 8: Allow to stand at least 10 minutes or longer before serving

This Quiche serve 8 people.

Tips:

  • May substitute for 2 cups of Swiss cheese, 1 cup of Swiss and 1 cup of cheddar cheese.
  • May substitute for 6 slices of bacon, ½ cup ham, chopped.
  • May substitute for chive, green onion tops.
  • For a variation add ½ cup chopped spinach, thawed and drained.

I like to “clean out” my fridge to make quiche. Leftover veggies (broccoli, carrots, cauliflower, spinach), lunch meat(pastrami is awesome, ham, turkey), cheeses, sauteed onion and garlic. Just put your goodies into the unbaked pie shell and cover with 6 beaten eggs and about 1 cup of cream, milk or half and half, seasoned with your favorite seasonings. Bake for about an hour til it poofs up and browns nicely.
